Here's a method to test:

An optimal way to test is usually to use an internet domain name, perhaps one you're not using, or to create a hostname such as 01.yourdomain.com, sign up for our month-to-month business hosting with that.  You'll direct the mx records for that invented name to our shared hosting environment (instructions come with the login email and in our kbase), and then forward email from, for example, first.last@yourdomain.com to first.last@01.yourdomain.com.

You can use the identities/personas feature to mask the "from" address so it's still, for example, first.last@yourdomain.com, even when you're actually sending from our Zimbra servers.  This masking also works for sending from iPhones and BES Blackberry devices.

When you're ready to migrate all your users, we'll create the yourdomain.com domain and migrate all the info at once, typically over a weekend.  If we use IMAPsync, this process can be performed without any down-time.  If we use a tool such as the Exchange Migration Wizard, due to how the exchange migration process works, it will involve some downtime, during which we will store your inbound mail, and forward it to your new accounts on our server once the process is complete.  We perform this kind of work regularly and are delighted to provide quality references once you've otherwise decided to move forward with 01.com.
